Kevin Boot is a Senior Principal Legal Counsel for Whole Foods Market.  Mr. Boot provides legal and regulatory advice for the company’s needs regarding food safety, sustainability, and pricing matters. Much of his support for sustainability matters focuses on improving packaging solutions, waste diversion, and developing strategies for new laws regarding Extended Producer Responsibility.  Mr. Boot has over twenty years’ leadership experience in food law at successful businesses and law firms with a focus on product development, establishing the regulatory status for novel human and animal ingredients, claim substantiation, and commercial transactions – both in the US, China, and Europe.
